The Best Frito Pie Casserole Recipe

Authentic Frito pie casserole has shredded cheese, black beans, ground beef, and enchilada sauce. Simple casseroles please the whole family. It makes great potluck leftovers!

INGREDIENTS

– 1 pound ground beef – 1 small onion, white or yellow, chopped finely – 1 package (or 2 tablespoons) taco seasoning – ½ cup water – 1 can (15 oz) black beans, drained and rinsed – 1 can (19 oz) enchilada sauce – 1 bag (9.25 oz) Frito corn chip – 2 cups Mexican style shredded cheese TOPPINGS – Green onions, sliced – Sour cream – Guacamole – Salsa – Jalapeno – Black Olive – Any taco toppings you like

INSTRUCTIONS

Warm the oven up to 350 degrees F. Spray cooking spray on a 13x9-inch baking dish. Get the ground beef brown in a big pan until it's almost done.

Step 1

It will take about 3–4 minutes of cooking after adding the onions until they are soft and the beef is no longer pink.

Step 2

Add the taco powder and water, then raise the heat to high. Turn down the heat and add the beans and enchilada sauce.

Step 3

Heat the blend through and make it a little thicker for two to three minutes. Cover the bottom of the baking dish with about 3 ½ cups of corn chips.

Step 4

Put 1 cup of shredded cheese on top. Add the meat mixture on top. Add the rest of the cheese.

Step 5

Leave the dish in the oven uncovered for 18 to 20 minutes, or until the cheese melts and the edges start to bubble.

Step 6

Take it out of the oven and add the rest of the corn chips and any other toppings you want. Serve right away. Put leftovers in the fridge.
