Despite the fact that I am a huge fan of rice krispie treats, I believe that I care about them a great deal more than the average person does.

In spite of the fact that it is an insanely simple dessert to prepare, there is a certain kind of enchantment that occurs when you combine butter, marshmallows, and wheat cereal that is crisp. However, there is a reason why these sweets are so popular, and it is possible that I am a little biassed because I enjoy all desserts that are based on rice (hello, rice pudding).

There is nothing really wrong with a traditional rice krispie dessert that is produced with those three components; but, there are occasions when I prefer to make it a little bit more interesting.

I have previously experimented with Chocolate Peanut Butter Rice Krispie Treats, and now I am rather enthusiastic about a new variation that I have just recently tested, which has strawberries and white chocolate.

The use of freeze-dried strawberries is going to be necessary in order for this sweet delight to be successful. For the strawberry flavour to be authentic, this is very necessary. In addition to the fact that I do not like strawberry jelly, using strawberry essence is not sufficient.

The use of fresh strawberries does not provide any benefits in terms of flavour, texture (a soggy mess), or preservation, whereas the use of freeze-dried strawberries is extremely beneficial.

In the event that you have never tried freeze-dried fruit before, you can find it readily available at grocery stores these days. This traditional dessert, buttercream, and a wide variety of other dessert recipes can all benefit from the addition of a fruity touch created by this method.

Trader Joe’s offers a broad variety of freeze-dried fruits at prices that are affordable, and they are located in the same section of the store as the dried fruits and nuts. These fruits include strawberries, blueberries, raspberries, mangoes, apples, and many others. A large range is also available in the Whole Foods supermarket store that I frequent.

Ingredients

  • Spray a 8×8 inch foil-lined baking pan with cooking spray. Set aside.
  • In a large nonstick pot, melt the butter over medium low heat. Add the 10-ounce bag of marshmallows, and stir for a few minutes, until melted and smooth.
  • Turn the heat off, then stir in the crisp rice cereal, freeze-dried strawberries, white chocolate chips, and 2 cups of marshmallows. Stir until everything is evenly distributed.
  • Press the mixture evenly into the prepared pan, and let cool for at least 20 minutes.
  • Cut into squares and enjoy!

Notes

I tried using just 10 ounces of marshmallows for this and found it wasn’t enough gooeyness. It’s worth it to add the extra!
