Ingredients :

For The Dressing

  • 1 lemon juiced
  • 2 tablespoons balsamic vinegar

  • Kosher salt

  • ¼ cup extra-virgin olive oil

  • ½ cup sliced almonds
  • 1 tablespoon extra-virgin olive oil
  • 6 ounces baby spinach
  • 1 pound strawberries trimmed and thinly sliced
  • 2 small shallots thinly sliced
  • ½ cup coarsely chopped fresh mint
  • ¼ cup crumbled feta plus more to your liking

1 . Make the dressing: Honey, lemon juice, and balsamic vinegar should be mixed together in a relatively small basin. A generous amount of kosher salt and black pepper, approximately half a teaspoon each, should be added. Use a whisk to mix the ingredients. As you start to sprinkle in the extra virgin olive oil, continue mixing the mixture rapidly without stopping.
Slowly incorporate oil into the dressing until it reaches the appropriate consistency, which is somewhere between ¼ cup and ⅛ cup. Carry on whisking until the dressing has reached an emulsified state. Taste, and if necessary, add additional salt and pepper to your taste.

2 . Toast the almonds: One tablespoon of extra virgin olive oil should be added to a small skillet that is heated over medium heat temperature. After about five minutes, add the almonds and continue to cook them while turning them frequently until they get a golden brown color and a fragrant aroma. As soon as possible, remove the dish from the fire and leave it aside to cool while you continue to work on the salad.
