Chocolate Marshmallow Cookie

Chocolate marshmallow cookies are fudgy, chewy double chocolate sugar cookies with gooey marshmallows and a crunchy sugar covering. 

– 1 cup (226 g) unsalted butter – 2 cups (240 g) all purpose flour – 2 teaspoons cornstarch – 1 teaspoon baking powder – ¼ teaspoon baking soda – ½ teaspoon salt – 1 cup (200 g) granulated sugar – ½ cup (100 g) light brown sugar – 1 large egg, room temperature – 1 large egg yolk, room temperature – 1 teaspoon (5 ml) vanilla extract – ½ cup (40 g) dutch process or unsweetened cooca powder – ¾ cup (45 g) mini marshmallows or 15 regular sized marshmallow – ¼ cup (50 g) granulated sugar for rolling

Melt the butter in a small bowl and let it cool for about fifteen minutes in the refrigerator.

Mix the flour, baking soda, cornstarch, baking powder, and salt thoroughly in a separate basin.

Mix the cooled melted butter, light brown, and granulated sugars in a large bowl. Egg, egg yolk, vanilla essence, and cocoa powder should be mixed well.

Pre-heat the oven to 350 F (177 C) for 20–30 minutes before baking cookies. Paper a large baking sheet. Reserve dough for 30 minutes before baking.

Scoop 3 tablespoons (45 ml) chocolate sugar cookie batter into a clean hand. Softly form dough disk. Place 6–7 small marshmallows or one regular marshmallow in the middle.

Roll cookie dough balls in sugar and lay them 3 inches (8 cm) apart on the lined baking sheet.

Cool chocolate mini marshmallow cookies on the baking sheet for 5 minutes. Let cool on a rack to room temperature, then enjoy!
