One of my most popular meals is Whole30 Mongolian Beef. This has been around forever, and you guys can't get enough. Everyone loves meatballs.
INGREDIENTS
for the meatballs:
– 2 tbsp avocado oil
– 2 lbs. ground beef 85% lean
– 1 large egg
– 2 tbsp coconut aminos I like Big Tree Farms Brand
– 2 tbsp arrowroot flour
– 1/2 tsp finely and freshly grated ginger about 1/2 inch knob of ginger, peeled
– 2 large cloves garlic, minced
– 1 tsp kosher salt
– 1/2 tsp white pepper black pepper is okay, too
– 1/3 cup chopped green onion white and light green parts only
INGREDIENTS
for the sauce:
– 1.5 tsp toasted sesame oil
– 3 tbsp coconut amino
– 2 tbsp rice vinegar
– 1 tsp red boat fish sauce
– 2 tsp arrowroot flour
– 1/4 cup beef broth
– 1 tbsp ketchup I use Primal Kitchen unsweetened
– 1/4 tsp cayenne pepper [or more if you like it hot] optional, for spicyfor serving:
– 1 tsp toasted sesame seed
– 1/4 thinly sliced green onions green part only
INSTRUCTIONS
create meatballs:- For a 9x13 baking dish, oil the bottom and preheat to 400 degrees F.
Step 1
Combine ground beef, egg, coconut aminos, arrowroot, ginger, garlic, salt, pepper, and green onion in a large bowl. Mix the meat with your hands until barely mixed.
Step 2
Put 1.5-inch round meatballs on the baking dish. Bake for 20 minutes until cooked through and gently browned on the sides.
Step 3
meanwhile, make the sauce:- Whisk all 'for the sauce' ingredients in a small bowl until well blended. Set aside until meatballs are done.
Step 4
finish the meatballs:- After browning and cooking, take the meatballs from the oven but leave it on. Carefully place cooked meatballs on a paper towel-lined dish with tongs.
Step 5
Throw away the grease in the bottom of the baking dish and gently wipe the inside with a paper towel.
Step 6
Return the cooked meatballs to the dish and pour sauce over them. Put back in the oven and simmer for 8 minutes to thicken the sauce.
Step 7
Serve meatballs on a dish after baking. Add sauce to meatballs and top with green onions and toasted sesame seeds.
