Buttery Mushroom Grilled Cheese, made in under 30 minutes, is loaded with Swiss cheese, mushrooms, and caramelised onions.

INGREDIENTS

For the mushrooms: – 2 tablespoons butter – 1 tablespoon olive oil – 8 ounces mushrooms, sliced – 1/2 cup thinly sliced onion – 1 teaspoon minced garlic – 1 tablespoon dry white wine – Pinch thyme – Salt and pepper For the sandwiches: – 2 tablespoons butter – 4 slices sturdy bread (such as sourdough) – 4 slices smoked Swiss cheese

INSTRUCTIONS

For mushrooms:- Heat oil and butter in a big sauté pan on medium. Once the butter sizzles, add mushrooms in a single layer. Let them cook quietly for a few minutes. 

Step 1

Flip mushrooms when their bottoms are golden brown and caramelised. Cook until the opposite side caramelises. Sauté onions for 2 minutes until tender. Mix in garlic.

Step 2

Deglaze the pan with wine and simmer for another minute. Add thyme, salt, and pepper to taste. Stop cooking.

Step 3

For sandwiches:- Butter one side of each of the four bread slices. Place one slice of bread (buttered side out), a slice of cheese, half the mushrooms, another slice of cheese, and a second slice of bread.

Step 4

Warm a grill pan on medium. Grill the sandwiches for 3-5 minutes until one side is browned and crunchy.

Step 5

 Flip the sandwiches carefully, cover the skillet with a lid or cookie sheet, and cook for another 2-3 minutes until the other side is golden and cheese is melty. Serve now.
