Homemade crackers are simple to make! A simple dough is rolled thinly, baked, and broken into rustic-style Black Pepper and Thyme Olive Oil Crackers.
INGREDIENTS

– 2 cups all-purpose flour– 1 Tbsp cracked black pepper (tellicherry is best)– 1 tsp fresh thyme, finely chopped– 1 Tbsp granulated sugar– ¼ tsp salt– ¼ cup extra-virgin olive oil– ¾ cup whole milk– 1 large egg white, lightly beaten– Coarse sea salt, for topping
INSTRUCTIONS
Blend flour, pepper, thyme, sugar, and salt in a food processor. When olive oil is added, pulse several times to form dough.

Step 1
Add milk to the food processor and blend until a loose ball forms. Remove dough from food processor and wrap tightly in plastic. Refrigerate dough for an hour.

Step 2
Bake two parchment-lined baking sheets at 375 degrees.

Step 3
Split dough in two. Roll each portion of dough into a large rectangle as thinly and evenly as possible on a lightly floured surface. Thinner crackers are crispier.

Step 4
Brush egg wash on dough and sprinkle sea salt.Bake crackers for 15-22 minutes until crispy and golden. Check 15 minutes later.

Step 5
If crackers are still pliable and not crispy, return to oven and check every 2 minutes. Break into pieces of any size after cooling completely.
