Blueberry Banana Baked Oatmeal Recipe

For a quick and healthy breakfast, this Blueberry Banana Baked Oatmeal is a great choice.

INGREDIENTS 

SERVINGS: 9 SERVINGS – 2 1/4 cups old-fashioned rolled oat – 1 teaspoon baking powder – 1/2 teaspoon ground cinnamon – 1/4 teaspoon salt – 1 cup ripe mashed bananas (about 2 large bananas or 3 medium bananas) – 3/4 cup milk* – 1/4 cup honey – 1 large egg – 1 teaspoon vanilla extract – 1 cup fresh or frozen blueberries*

INSTRUCTIONS

Warm the oven up to 350°F. Spray non-stick cooking spray all over an 8-inch square baking pan and set it aside.

Old-fashioned rolled oats, baking powder, cinnamon, and salt should all be mixed together in a large bowl. Put away.

In a different bowl, mix the milk, honey, egg, vanilla extract, and mashed banana until everything is well mixed.

Mix the dry ingredients with the wet ones until everything is well mixed together. Add the blueberries slowly and carefully.

Pour the mixture into the prepared baking pan and level it.Bake it at 350°F for 30–40 minutes until the top is set and light golden. I usually finish in 35–36 minutes.

Remove it from the oven and let it cool for 10–15 minutes. Slice it and serve it warm, or let it cool, cover it tightly, and refrigerate until serving.
