Broil Oranges with Toasted Coconut create a refreshing dessert or palate cleanser between courses. You may cook these for a quick afternoon snack or brunch because they're easy.
INGREDIENTS
– 1 orange, sliced in half– 2 teaspoons brown sugar– Handful sweetened, shredded coconut
INSTRUCTIONS
Turn on the grill high. Put parchment paper on a baking sheet.
Step 1
Take off any orange seeds that are on the outside. For extra flavor, you can cut the orange into slices by running a knife between the meat and the peel.
Step 2
If you don't have a grapefruit spoon, this makes it easy to take off. Be careful not to cut through the peel because you want to keep it whole.
Step 3
On each half of the orange, rub a teaspoon of brown sugar in. Put on the baking sheet and put under the grill.
Step 4
I used the lower shelf of my oven so it was far away. I would set the grill to low if you are close.
Step 5
For about 6 minutes, broil until bubbly and a little browned. Put the coconut in a small, dry pan over medium-low heat.
Step 6
Stir the coconut every so often while it turns golden brown. Take it off the heat.
Step 7
Put the warm oranges on a plate with the toasted coconut. You can add cinnamon or ginger if you want.
