Cheese Danishes have a buttery, silky crust and a luscious feta and ricotta filling. The ideal blend of salty and sweet, drizzled with blueberry jam, will improve your morning or afternoon tea.
– ⅔ cup water– 1 tablespoon sugar– 1 teaspoon active dry yeast– 1 egg– ½ cup butter– 2 cups all-purpose flour– ½ teaspoon salt– 1 cup feta cheese – 1 cup ricotta cheese

Let water, sugar, and yeast rest in a small bowl until the yeast bubbles. In another small bowl, whisk egg and butter.

Mix flour and salt in your mixer bowl. Add the butter/egg and yeast mixtures and beat with the paddle attachment until fully combined.

Soft dough is expected. Rub some oil on the dough in an oiled basin. Give it a warm spot to double in size.

Meanwhile, blend together the feta and ricotta cheeses. Roll the dough into four equal portions and shape each into a ball.

Flatten each ball to 4 inches diameter. Put a quarter of the cheese mixture in the middle and fold the dough to cover it.

Flatten the dough to 4 inches again. Cut the dough with a knife, leaving an inch in the middle and making 12 slits around.

Repeat with remaining dough and filling. Preheat oven to 375℉. Give the pastries 30 more minutes to rise.

Egg wash the pastries and put a tablespoon of blueberry jam in the middle. Take 45 minutes to bake till golden brown.
