Coffee Cookies Recipe

Espresso Cookies have melty chocolate centers and are chewy.  Simple no-chill coffee cookie recipe. To enjoy fresh chocolate-filled cookies with coffee quickly!

Ingredient

– 2 cups (240 g) all purpose flour – ½ tsp baking soda – ½ tsp salt – ½ cup (113 g) unsalted butter, melted and cooled – 1 cup (200 g) light brown sugar – ¼ cup (50 g) granulated sugar – ¼ cup (12 g) instant espresso powder or instant coffee powder – 1 large egg (US), room temperature – 1 large egg yolk (US), room temperature – 2 tsp (10 ml) vanilla extract – 1 cup (140 g, 6oz.) dark chocolate, evenly chopped – 2 tbsp flaky salt for topping optional

The oven should be preheated to 350 F (177 C). Apply parchment paper to the edges of two large baking sheets.

Mix the flour, baking soda, and salt together in a medium-sized mixing bowl.

Light brown sugar, granulated sugar, espresso powder, and cooled melted butter should be in a large basin. Blend. Coffee-scented moist sand.

Smoothly mix the egg, egg yolk, and vanilla extract. Mix dry ingredients with wet until just mixed. Mix in chopped dark chocolate.

Place 2 teaspoons (30 ml) espresso chocolate chip cookie dough on a baking sheet 3 inches apart. I use a medium cookie scoop for even portions.

Bake the coffee cookies for 9 - 11 minutes. The edges will be set and the centers will look slightly puffed.

Placing the pan on the burner or cooling rack quickly deflates cookies. Salt them. Remove from hot baking sheet and cool on rack to room temperature after 3 minutes.
