FOR THE DIPPING SAUCE: – 1/2 cup low sodium soy sauce – 1 teaspoon seasoned rice wine vinegar – 1/2 teaspoon sesame oil – 1 Tablespoon sugar – 1 Tablespoon sliced scallion – 1/2 teaspoon crushed red pepper flake – 1/4 teaspoon sesame seed FOR THE POTSTICKERS: – 1 pound ground chicken (See Kelly’s Notes) – 1/4 cup sliced scallions, green and wite part – 2 teaspoons minced garlic – 1 teaspoon minced fresh ginger – 1 Tablespoon low sodium soy sauce – 1 teaspoon sesame oil – 25 round wonton wrapper – Vegetable oil, for pan-frying

Make dipping sauce:- Mix soy sauce, rice wine vinegar, sesame oil, sugar, scallions, red pepper flakes, and sesame seeds in a medium bowl. Reserve sauce.

Step 1

Make pots tickers:- Ground chicken, scallions, garlic, ginger, soy sauce, and sesame oil should be mixed well in a medium bowl.

Step 2

Fill a small basin with water and place wonton wrappers on a work surface to make potstickers.

Step 3

Place 2 teaspoons of chicken mixture in the middle of each wrapper. Dip your finger in water and run it around each wonton wrapper.

Step 4

Fold the wrappers in half and pinch top pleats. Flatten potsticker bottoms by pressing.

Step 5

Use 2 tablespoons vegetable oil in a large sauté pan over medium-high heat. After swirling the oil to coat the pan bottom, add a single layer of potstickers and sear until golden brown and crispy.

Step 6

After browning the potstickers, add ¼ cup water and cover to steam until chicken is cooked through, about 5 minutes.

Step 7

Cook the potstickers without the lid, stirring the pan until the water evaporates. Repeat searing and steaming the remaining potstickers on a paper towel-lined platter.
