Easy Chocolate Peppermint Cookies Recipe 

White chocolate dipped, chewy chocolate peppermint cookies are sprinkled with crushed candy canes for a festive look. Double the peppermint flavour in the cookie dough with peppermint extract!

SERVINGS: 18 COOKIES – 1 ⅓ cups all-purpose flour spooned and leveled (165 grams) – ⅓ cup natural unsweetened cocoa powder (30 grams) – ½ teaspoon baking soda – ¼ teaspoon salt – ½ cup unsalted butter softened (115 grams) – ⅔ cup packed light brown sugar (135 grams) – ¼ cup granulated sugar (50 grams) – 1 large egg at room temperature – 1 teaspoon pure vanilla extract – ½ teaspoon peppermint extract – 8 ounces white chocolate roughly chopped (I prefer chocolate bars) – 5 to 6 regular-sized candy canes crushed

Ingredients 

Step 1

To make cookie dough: After sifting flour and cocoa powder into a large bowl, add baking soda and salt. Set aside.

Step 2

In a stand mixer with the paddle attachment or a large basin with a handheld mixer, beat butter until smooth. Blend brown and granulated sugar for 1–2 minutes.

Step 3

Add the egg, vanilla, and peppermint essence and mix well, scraping the bowl. Stir dry ingredients just until combined. Refrigerate tightly covered for an hour.

Step 4

Preheat the oven to 350°F (180°C). Set aside two large parchment or silicone-matted baking sheets.

Step 5

With a 1.5 tablespoon cookie scoop, scoop cookie dough, roll it into balls, and place them on baking pans with space between them.

Step 6

Bake 10–12 minutes until cookie tops are crisp. After 5 minutes on the baking pans, carefully move the cookies to a wire rack to finish cooling.

Step 7

Cookie dipping and assembly: Line two baking sheets with parchment or silicone mats. Set aside.

Step 8

Put chopped white chocolate in a microwave-safe bowl. Mix thoroughly after each 20–30 second microwave increment at 50% power until completely melted and smooth.

Step 9

Dip half of each biscuit in melted white chocolate and scrape bottom. Crush and sprinkle candy canes on baking sheet. Repeat with remaining cookies.

Step 10

Let the cookies' baking sheets chill for 20–30 minutes to harden the chocolate.
