Preheat oven to 350°F.Set aside two large parchment-paper-lined baking sheets.Mix flour, cornflour, baking powder, soda, and salt in a medium bowl. Set aside.

Either in a large basin with a hand mixer or in a stand mixer that is equipped with the paddle attachment, beat the butter and sugar together until they reach a creamy consistency.

For a short time, beat in the egg and vanilla extract. Slowly add the flour mixture while the mixer is on low speed and beat until everything is well mixed.

A few times, stop and scrape the bowl's sides and bottom.Add the colourful sprinkles with a rubber spatula.

Prepare a ball out of two teaspoons of dough by rolling it into a ball. Applying mild pressure and flattening the cookie into a thick disc with the bottom of a glass is the second step.

Bake for ten to twelve minutes, or until the border is just beginning to turn golden. When the cookies are allowed to cool, the centres will continue to appear mushy, but they will become more firm.

Let baking sheet cool completely after removing from oven.Bake the cake mix for 5-7 minutes at 350 F on a parchment-lined baking sheet. Cool completely before incorporating in buttercream.

When the butter is creamy, beat it. Combine the cake mix, powdered sugar, and vanilla extract, and beat until the mixture is completely smooth.

If you are only using one food colour, add a few drops and mix them in until they are fully mixed in. You could also split the frosting into several bowls and colour each one a different colour.

Frosting should be piped around the edges of the cookies using a piping bag equipped with a star-shaped piping technique.

Allow the cookies to sit out for half an hour, or chill them for a few minutes, so that the icing can harden before serving.
