Garlic Parmesan Roasted Potatoes Recipe


These garlic parmesan roasted potatoes are easy to make and make a great dinner side. These healthier, crispy potatoes taste like fried potatoes!


– 1 and 1/2 lbs red potatoe – 2 tbsp. oil – 2 cloves garlic minced (1 tsp.) – ½ tsp. salt or to taste – ¼ tsp. freshly cracked black pepper or to taste – ¼ cup. freshly grated parmesan – 2 tbsp. chopped parsley



Start with a 400-degree oven. Line a baking sheet with foil and non-stick cooking spray or parchment paper and set aside.


Step 1

Clean potatoes well. Chop each potato into pieces. Pat potatoes dry with paper towels.


Step 2

Toss potatoes with oil, garlic, salt, and pepper in a large bowl until coated.


Step 3

Spread potatoes evenly on baking sheet and bake 35-40 minutes, stirring halfway.


Step 4

To drain oil, remove potatoes from oven and place on a paper towel-lined plate. Cool a few minutes.


Step 5

Mix potatoes with freshly grated parmesan and parsley. Serve now.
