Healthy Cucumber Sandwiches Recipe

With cream cheese and dill, these cucumber sandwiches are both creamy and crunchy. They're great for afternoon tea or a quick veggie lunch.

INGREDIENTS

– 4 ounces cream cheese, at room temperature – 4 Tablespoons mayo – 1 1/2 teaspoons dill, dried or fresh – 3 teaspoons lemon juice (about the juice of one lemon) – 10 slices good quality white bread (or bread of your choice) – 3 mini seedless cucumbers, sliced – Salt and pepper – Fresh chives, for serving

INSTRUCTIONS

Cream cheese, mayonnaise, dill, and lemon juice should be mixed together in a small basin using a whisk.

Step 1

First, remove the crusts off the bread, and then spread the cream cheese mixture on both sides of the bread.  

Step 2

Cover one side of the bread with a single layer of cucumbers and spread them out.  

Step 3

The second slice of bread should be placed on top once the dish has been seasoned with salt, pepper, and chives.
