Hot Chocolate Brownie Cookies Recipe

The ultimate chewy and fudgy brownie cookie prepared with hot chocolate. Hot cocoa brownie cookies have sticky marshmallows.

– 8 oz. (226g) good quality chocolate bar, 60% or higher – ½ cup (113g) unsalted butter – ¾ cup (150g) granulated sugar – 2 large eggs (US), room temperature – 1 oz. packet of powdered hot chocolate mix (choose one without marshmallows) – 2 tsp instant espresso powder – 1 tsp baking powder – ½ tsp salt – ¾ cup (90g) all purpose flour – ½ cup marshmallow creme

Heat oven to 350 F (177 C). Parchment two big baking sheets. Set aside. Make a glass or dish of water really hot.

In a microwave-safe bowl, heat butter and chocolate for 1 minute. Melt butter and partially melt chocolate and mix well.

Whisk the sugar and eggs in a stand mixer with the whisk attachment on medium speed until light, frothy, and pale yellow. About 4-5 min.

Slowly add melted chocolate on low. Beat the mixture into the eggs and sugar until cohesive. Scrape bowl sides and bottom.

Combine hot chocolate, espresso, baking, and salt. Whisk slowly to mix. Cleaning the bowl's edges and bottom.

Put a big spoon in hot water. Use a heaping scoop of marshmallow creme. Add crème to brownie/cookie batter. For a marbled look, gently swirl.

Scoop 3–4 large cookies with a large cookie scoop. Place cookie dough on baking sheets. Leave 2-3 inches between cookies.

Center-rack cookies Crisp edges take 10-14 minutes. Unset cores. Cool cookies. 10-15 min. Scrape cookies off parchment paper, cool on a rack, and enjoy!
