SERVINGS: 1 CHEESECAKE – Cheesecake recipe EQUIPMENT – Springform pan – Heavy duty aluminum foil – Oven bag or slow cooker bag – Saucepan or kettle – Large roasting pan

Ingredients

Step 1

Prepare the cheesecake crust: Bake the crust according to the directions and let cool.

Step 2

Prepare pan: Wrap the springform pan with pre-baked crust in aluminium foil and place in a large oven bag. Oven bag sides should match springform pan edge.

Step 3

Before making the cheesecake filling, boil a big kettle of water for the water bath.

Step 4

Prepare filling: Make cheesecake filling as directed. In the springform pan, evenly distribute cheesecake filling.

Step 5

After lightly tapping the pan on the counter to raise air bubbles to the top, use a toothpick or skewer to remove and flatten large ones.

Step 6

Fill a large roasting pan with boiling water to approximately 1 inch deep to create the water bath. Carefully place the wrapped springform pan in the roasting pan. Beware—the water is hot!

Step 7

Place the roasting pan in the oven by lifting the handles. Follow the instructions to bake the cheesecake until the sides are firm and the centre is slightly jiggly.

Step 8

Let the cheesecake cool in the oven for an hour after turning off the oven and opening the door.

Step 9

After 1 hour of chilling with the door cracked, remove the roasting pan with the cheesecake from the oven.

Step 10

Carefully remove the springform pan and foil/oven bag. Cool springform pan on wire rack. Cover firmly and refrigerate for many hours or overnight after chilling.
