This Oatmeal Toffee Skillet Cookie is easy to make, tastes great, and melts in your mouth.
INGREDIENTS
– 2 sticks butter, at room temperature– 1 cup brown sugar– 1 cup white sugar– 2 egg– 1 teaspoon vanilla– 2 cups flour– 1 tsp. soda– 1/2 tsp. salt– 1/2 tsp. baking powder– 2 cups oatmeal– 1 12 oz. bag heath toffee baking bit– 1/2 cup semi sweet chocolate chip
INSTRUCTIONS
Warm the oven up to 350 degrees. Grease two 8-inch cast iron skillets or one 9-by-13-inch baking pan with a little oil.
Step 1
On medium speed, beat the butter and sugars in the bowl of an electric mixer for about three minutes, or until the mixture is light and fluffy.
Step 2
One at a time, add the eggs and beat well after each one. If necessary, scrape the bowl down. Mix in the vanilla extract.
Step 3
Mix the flour, baking powder, soda, and salt in a different bowl using a whisk. The mixer should be on low speed.
Step 4
Slowly add the flour mixture to the butter mixture while beating it. Add the oatmeal and stir.
Step 5
You can press the dough into two 8-inch cast iron skillets or a 9-by-13-inch pan. You can also freeze half of the dough and use it later.
Step 6
Add chocolate chips and pieces of fruit to the top. Bake in an oven that is already hot for 20 to 30 minutes, or until the edges are set and the middle is still a little gooey.
Step 7
Set it up first, then cut it up and serve it. You can also choose not to and just enjoy the warm, gooey mess.
