Protein Muffin Recipe

– 1 cup mashed banana – 3 large egg – ¼ cup maple syrup –1 cup natural drippy almond butter, I used Wild Friend – 2 Tablespoons almond milk – 1 teaspoon vanilla extract – ½ cup vanilla protein powder, I used Sun Warrior – 1 teaspoon baking powder – ¼ teaspoon sea salt, skip if almond butter is salted – ½ cup chocolate chip

Ingredient

Preheat oven to 350°F. Spray muffin tins with cooking spray or line them with paper or silicone liners. Set aside.

Blend all ingredients (except chocolate chips) in a high-speed blender for 1 minute until creamy.

Stir in chocolate chips with a spatula.

Blend all ingredients (except chocolate chips) in a high-speed blender for 1 minute until creamy.

Bake for 18–20 minutes until the tops are set and a toothpick inserted into the center comes out clean.

Let muffins cool for 5-10 minutes until firm and handleable. Cool on a wire rack after removing from tin.
