Rainbow Bundt Cake Recipe

There is a rainbow inside a vanilla bundt cake, making it look bright and happy.

INGREDIENTS

WHITE / RAINBOW BUNDT CAKE – 3/4 cup buttermilk , room temperature – 2/3 cup sour cream , room temperature – 4 egg whites , room temperature – 1/3 cup vegetable oil – 1 Tablespoon vanilla – 1 15.25oz Box Cake White Mix, I used Duncan Hines for the best taste and texture, but any other brand will be similar. – rainbow gel colors (red, orange, yellow, green, blue, purple) WHITE CHOCOLATE GANACHE DRIP – 1 cup "bright white" chocolate candy melts , I used Wilton brand, but I also love Sweet Tooth Fairy chocolate melt – 1/4 cup heavy cream EXTRAS – 1/2 cup rainbow jimmies/sprinkle

INSTRUCTIONS

For Rainbow Bundt Cake:- Pre-heat the oven to 325 degrees and grease and flour your round bundt pan. Set aside.

Step 1

Whisk all cake ingredients except the cake mix and food gel colors in a large bowl. Add the cake mix and whisk gently until barely mixed.

Step 2

Fill 6 small bowls with generous 1/2 cup white batter. Use one drop(ish) of gel coloring per bowl and gently swirl to distribute.  

Step 3

Fill 6 piping bags carefully with colorful cake batter (I like to fold them over with a drinking glass).

Step 4

Spread a little amount of white cake batter at the bottom of the circle bundt cake (see video). Snip the tip to create a little marble-sized circle hole.

Step 5

Do not pipe the first color outside the first white layer. Purple makes the rainbow upside down—oops! For a traditional effect, pipe red first). Tapping the pan flattens the batter before adding the next color.

Step 6

Pipe a ring of the second color around the color stripe (see video). Repeat with the remaining colors, tapping the pan to keep it smooth before adding each color.

Step 7

Put 1/2 cup of white cake batter in another piping bag. Like before, pipe a white layer in the middle and tap the pan to flatten.

Step 8

Last, pipe white cake batter evenly on top. Cake centers bake 25–27 minutes. Flip the bundt cake onto a wire rack after 30 seconds of cooling.vGanache drops white chocolate

Step 9

Mix heavy cream and white chocolate candy melts in a microwave-safe glass bowl. Heat 1 minute, then stir smooth. 15 sec, perhaps stirring. Douse cake with cool drip bottle. Sprinkle quickly.Slice and enjoy your secret rainbow!
