These sautéed carrots with bacon Dijon dressing are too good to pass up! They're great for a quick dinner during the week or as a side dish for the holidays.
With a slanted spoon, move the bacon to a plate lined with paper towels. Take out all but 2 tablespoons of the bacon fat from the pan.
Turn up the heat to a medium level. Cover the pan with foil and add the carrots. Cook for three to four minutes without moving, letting the bottom edge caramelise.
Take off the lid and stir for two to three minutes without it. After that, add the crispy bacon, mustard, honey, vinegar, salt, and pepper.
