Sheet Pan Moroccan-inspired Chicken Recipe

INGREDIENTS

– 3.5 pounds bone-in skin-on chicken parts I do a mix of chicken thighs and drumstick – 1 pound sweet potatoes, cut into 2 inch wedge – 2 cups thinly sliced sweet onions about 1 large sweet onion. You can also sub a yellow onion here if you prefer. – 1 cup drained, pitted green olive – ¼ cup avocado oil – ¼ cup distilled white vinegar – 1 teaspoon cumin – 1 teaspoon ground turmeric – 1 teaspoon paprika – ¼ teaspoon cayenne – A pinch of saffron threads about 20-25 thread – 2 cloves minced garlic – 2 teaspoon kosher salt – 1 teaspoon black pepper – ¼ cup golden raisin – ¼ cup fresh dill fronds for garnish

INSTRUCTIONS

Warm the oven up to 375 degrees. Put parchment paper on a baking sheet and set it aside.

Step 1

Prepare the baking sheet and put the chicken pieces, potatoes, sweet onion, and green olives on it.

Step 2

Put the garlic, cumin, ground turmeric, paprika, cayenne, saffron threads, and white vinegar in a small bowl. 

Step 3

Mix everything together with a whisk, then drizzle it over the baking sheet's contents. Mix everything together well and spread it out into a single layer. Add the pepper and salt.

Step 4

Put it in the oven and cook for 20 minutes. Take it out of the oven and add the raisins. To mix, gently toss. 

Step 5

Put the sheet pan back in the oven and cook for another 20 to 25 minutes, or until the chicken is golden brown and fully cooked. Add dill to the top to serve.
