Simple Mandazi, African Donut Recipe

I had a sore throat this weekend and didn't want to cook. But I wanted donuts. I wanted something new, so I found this African donut recipe online. I was thrilled.  

– 3 cups all purpose flour – ½ cup coconut milk – ½ cup sugar – 1 egg – 1 teaspoon active dry yeast – ½ cup warm water – 1 tablespoon vegetable oil – ½ teaspoon salt – 1 teaspoon cardamom – 1 teaspoon cinnamon – vegetable oil for frying donut

Ingredient

Stir the yeast and warm water together in a small basin. Wait five minutes for the yeast to dissolve.

Combine the flour, cinnamon, cardamom, and salt in the bowl of your mixer and stir.

When you add the yeast mixture, add the vegetable oil, egg, coconut milk, and sugar.

Mix everything with the hook attachment until the dough isn't sticky and doesn't stick to the bowl. Add flour if needed.

Cover the dough with plastic wrap in an oiled bowl. Wait an hour for the dough to rise.

Heat oil in a wok or frying pan. Cut the dough into 6 pieces for easier rolling and cutting.

Fry both sides. Put donuts on paper towels to absorb grease. Use remaining dough. Sprinkle powder sugar and enjoy.
