Spaghetti Aglio E Olio Recipe

Spaghetti Aglio e Olio—pasta, garlic, basic spices, and olive oil—is a classic Italian meal. Garlicky spaghetti in under 20 minutes is simple and cheap! 

Ingredient

– 12 ounces spaghetti – Kosher salt – ½ cup extra virgin olive oil – 8 garlic cloves, thinly sliced – ½ teaspoon red pepper flake – ⅓ cup grated parmesan – Chopped parsley

Direction

Boil a big kettle of water. Add 1 tablespoon of kosher salt to the water. Add pasta and cook according to package directions until just before al dente (my took 9 minutes).

Four minutes after adding pasta to boiling water, heat olive oil in a large pan over medium heat. Stir in garlic for 2–3 minutes to brown. Reduce heat to prevent scorching garlic.

Add red pepper flakes (if using) and stir for 30 seconds after the garlic starts to color. Remove the oil from heat until the pasta is done.

After draining the pasta, return the pan to medium heat. Add saved pasta water to oil and boil until reduced by ⅓.

Stir cooked spaghetti into sauce till coated and cooked to your taste. After turning off the heat, add parmesan and parsley. Try again to mix.

Let the pasta soak up the sauce for two minutes before serving. Add additional parmesan and red pepper flakes if desired.
