Strawberry Crumble Recipe

A crispy brown sugar crumble tops this strawberry crumble with fresh, sweet strawberries. Making strawberry crisp for spring and summer entertaining is simple.

Oat Crumble Topping – ¾ cup (65 g) rolled or old fashioned oat – ½ cup (60 g) all purpose flour – ½ cup (100 g) light brown sugar – 1 tsp ground cinnamon – ¼ tsp salt – 6 - 8 tbsp (57 - 113 g) cold unsalted butter, cubed Strawberry Crumble – 5 - 6 cups (908 g) strawberries, washed, hulled and halved – ½ cup (100 g) granulated sugar – 3 tbsp (24 g) cornstarch – 1 lemon zested – 2 tbsp (30 ml) lemon juice – 1 tsp (5 ml) vanilla extract

Grease a baking dish that measures 9 x 9 or up to 11 x 7 inches very lightly. The oven should be preheated to 350 F (177 C).

Mix the flour, oats, light brown sugar, ground cinnamon, and salt together in a large bowl.

Cut the cold cubed butter into the dry crumble topping with a pastry cutter, hands, or two forks until it resembles wet sand with bigger crumbs. No butter should be visible.

Put crumble in fridge to top strawberries. In another large basin, mix sugar, cornstarch, lemon juice, and vanilla with cleaned and halved strawberries. Coat all strawberries.

Put the strawberry mixture in the baking dish. Cover strawberries with brown sugar crumble.

Bake the strawberry crisp until the top is golden brown and the roasted strawberry filling is bubbling around the edges.

After letting the strawberry dessert cool for fifteen minutes, spoon it into a bowl, add whipped cream or ice cream on top, and dig in!
