A sweet lemon dressing goes well with this spinach salad with strawberries and toasted nuts. It's the perfect summer salad.
INGREDIENTS
For the salad:
– 1/2 cup chopped pecans or walnut
– 12 ounces fresh baby spinach, rinsed and dried
– 1 quart strawberries, sliced
For the dressing:
– 1 Tablespoon fresh lemon juice
– 2 Tablespoons white wine vinegar
– 1/4 cup sugar
– 1 Tablespoon vegetable oil
INSTRUCTIONS
Put the nuts in a dry pan and toast them over medium-low heat for 5 to 6 minutes, or until they start to smell good. Leave to cool.
Step 1
Put the spinach, roasted nuts, and strawberries into a big bowl and mix them together.
Step 2
Put oil, vinegar, sugar, and lemon juice in a jar. Combine everything well by shaking. Put it in the fridge until you're ready to serve.
Step 3
When you're ready to serve, shake the jar and pour the sauce over the spinach. Toss to mix.
