Super Chocolate Cake with Mixed Berry and Cream Cheese Filling Recipe

Mixed Berry-Cream Cheese Chocolate Cake. The title would have been too long if I had added chocolate ganache and strawberries. What to say about this cake.  

– 2 cups all-purpose flour – 2 cups sugar – 3/4 cup cocoa powder – 1 teaspoon salt – 1 teaspoon baking powder – 2 teaspoon baking soda – 1 cup buttermilk – 1/2 cup vegetable oil – 2 egg – 1 teaspoon vanilla extract – 1 cup hot coffee – 1 1/2 pounds mixed berrie – 1/3 cup sugar – 3 tablespoon cornstarch – 1 teaspoon lemon juice – 2 tablespoon butter



Two 8-inch cake pans are needed. Cut two cake pan-sized parchment paper circles. Put parchment papers inside and butter each pan with melted butter.


Add flour, sugar, cocoa, baking soda, baking powder, and salt to your mixing bowl. Mix everything well on low speed with the paddle attachment.


Mix wet and dry components. Pour the coffee carefully into the mixer on low speed and mix until blended. Scrape bowl bottom with spatula and stir as needed. 


Put a toothpick in the middle of the cake and see whether it comes out clean. Cool the cake in the pans for 30 minutes, then transfer it to a cooling rack or cutting board to finish cooling.


Add sugar, cornstarch, and lemon juice. I used raspberries, strawberries, and blueberries from the bag. Heat this on medium until thickened. 


Combine heavy cream, chocolate chips, and instant coffee in a small saucepan and heat over a double boiler until smooth. Stir occasionally; this takes around 5 minutes to make.


The cream cheese and whipped cream topping requires heavy cream, confectioner's sugar, vanilla extract, and cream cheese. Put heavy cream in the mixer bowl and mix until it thickens and produces soft peaks.


 The mixture should be thick enough to spread. Cut each cake into 3 or 2 pieces, starting with the top, to make it even. 


Add the first cake slice to a dish, then fruit filling, cream cheese filling, cake, fruit filling, cake, cream cheese filling, cake. Refrigerate the cake for two hours to set. 


Cut the cake's uneven sides with a sharp knife after two hours. Spread ganache on the cake's top and sides with a cake spatula. Top with strawberry slices.
