Traditional deviled eggs are usually all one texture, tender. The yolks are creamy and tender after being combined with mayo and seasonings, while the egg whites are solid but still soft.

INGREDIENTS

  • 6 large hard boiled eggs
  • oil for spritzing
  • paprika optional

Breading Ingredients

  • ¼ cup all purpose flour
  • ¼ teaspoon finely ground sea salt
  • ½ cup fine bread crumbs
  • ¼ cup panko bread crumbs
  • ½ teaspoon finely ground sea salt
  • 3 Tablespoons mayonnaise
  • ½ teaspoon white wine vinegar
  • ½ teaspoon spicy mustard
  • 1 large egg, lightly beaten

Deviled Egg Filling Ingredients

  • 6 egg yolks
  • 3 Tablespoons mayonnaise
  • ½ teaspoon white wine vinegar
  • ½ teaspoon spicy mustard or any mustard you like
  • 1 Tablespoon sweet pickle relish
  • salt and pepper to taste

Prepare the Recipe

  • Six large eggs should be hard-boiled and then totally cooled. This is how I make it: Pressure Cooker: Hard-Boiled Eggs
    Dividing the eggs lengthwise, transfer the yolks to a medium-sized bowl while keeping the whites on a tray.

Deviled Egg Filling

  • To the bowl containing the egg yolks, add three tablespoons of mayonnaise, one teaspoon of mustard, and one teaspoon of white wine vinegar.

  • Beat the egg yolks and the other wet ingredients together with a hand mixer until smooth. A fork can also be used, although it won’t be as light and airy or as smooth.

  • Add the sweet pickle relish and stir. When you are ready to fill your deviled eggs, cover the bowl and refrigerate it.

Breading the Egg Whites

  • Place the flour in a quart-sized ziplock bag with ¼ teaspoon of sea salt and shake to combine.
    Shake together the bread crumbs, panko, and ¼ teaspoon of salt in a second quart-sized plastic container.

  • Mix one big raw egg, ½ teaspoon white wine vinegar, ½ teaspoon mustard, and three Tablespoons mayonnaise in a small bowl. Using a fork, whisk until thoroughly blended.
    After adding all of the egg white halves to the bag containing the flour/salt mixture, shake the bag to ensure the eggs are covered.

  • Take out one half of the egg white from the flour bag and tap it to get rid of extra flour. Using a fork, turn the egg white so that it is completely coated after placing it in the basin containing the moist batter.

  • Using a fork, remove the coated egg white and set it on top of the breadcrumbs inside the bag. Spoon the breadcrumbs onto the egg with a spoon, then shake in the bag.
    Take off the coated egg white half and arrange it on a tray, oval side up. For each egg white half, use the same procedure.
