- 2 Tablespoons unsalted butter
- ½ cup yellow onion, finely diced
- 1 Tablespoon olive oil
- 2 1/2 cups chicken broth, low sodium
- 1 ¼ cup white long grain rice, uncooked
- 2 cups cooked ham, diced
- 2 cups broccoli florets
- 10.75 oz. cream of chicken soup
- ½ cup sour cream
- ¾ cup milk
- 2 ½ cups shredded cheddar cheese, divided
- Salt/Pepper, optional

- 1 cup Ritz Crackers, crushed into crumbs
- 2 Tablespoons butter, melted

- The purpose of this recipe is to make everything for the casserole in one pot and then transfer it to a casserole dish to bake. Before you start, check the amount of liquid (we’ll use chicken broth) and cooking time listed on the rice packaging. If you’d like, cook the rice on its own without adding the broth element. Three and a half cups of cooked rice are needed to mix with the remaining ingredients for the casserole. I use long grain white rice, and the cooking times listed below are ideal.

- Set the oven temperature to 350°F.
- In a big saucepan set over medium heat, melt the butter.
- Cook the chopped onions for five minutes, or until they become tender.

- Rice, olive oil, and chicken stock should all be added to the saucepan. Bring to a boil, then lower the heat to a simmer.
Cook for eight minutes with a tight cover. - Cover again, add the broccoli, and simmer for an additional seven minutes. Don’t stir.

- Cover and simmer the rice for up to five more minutes, or until it is cooked through, if there is still liquid in the pot after fifteen minutes.

- Take off the heat source and keep the lid on. Give the rice ten minutes to rest. During this time, any rice that is stuck to the bottom of the pot will release.
- Add the half of the cheddar cheese, condensed soup, sour cream, and diced ham. Mix until thoroughly mixed.
Transfer to a 9 x 13 casserole dish that has been lightly oiled.

- Place the leftover cheddar cheese on top.
- Bake, covered, for fifteen minutes.

- Mix the butter with the Ritz cracker crumbs. Cover the dish with the mixture and continue baking it for ten more minutes without a cover. Give the casserole five minutes to sit.

- Use long grain white rice, not quick rice. Better flavor and a creamier consistency characterize it.

- This casserole also tastes great with Crispy Fried Onion Tops instead of Ritz.
- You can use frozen broccoli in place of fresh. Pay it dry after letting it defrost.
- Green beans, sliced carrots, celery, and peas are additional vegetable alternatives.
- Cheese: If you can, shred the cheese straight from the block; it will melt and taste far better than cheese that has been prepackaged. The Extra Sharp Yellow Cracker Barrel Cheese melts incredibly well.

- Put in an airtight container, freeze for up to three months, or refrigerate for up to three days. This is one of my favorite freezer meals because it reheats and freezes really nicely!
Prepare Ahead Technique:

- Put together as directed, omitting the Ritz topping.
In the meantime, cover and chill until baking time. (Alternatively, you could freeze it and then thaw it for a full day before completing the subsequent instructions below.)

- Before baking, if at all possible, let it sit at room temperature for half an hour.
Bake the casserole covered for a further twenty-five minutes, or until the cheese is melted and heated through.
