  • 1 large bulb fennel, thinly sliced

  • 1.5 tsp sea salt (plus more to taste)
  • 2 tsp fresh or dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 cup nomato sauce
  • 1/4 cup fresh basil, chopped
  • 3 cups sodium free chicken bone broth or stock
  • 2 cups water
  • 4–6 cups spinach or kale
  • 4 oz grain-free AIP pasta*

  • The olive oil should be added to a large stockpot, slow cooker, or Instant Pot, and then heated over medium heat or using the sauté function.
  • Sauté the onions, celery, carrot, and garlic until the onions become translucent. Meanwhile, add the mushrooms.
  • Fennel that has been cut very thinly should then be added, and stirring should continue until the fennel begins to simmer down.
  • Sea salt, thyme, oregano, and rosemary should be added to the saucepan along with ground turkey, and the mixture should be cooked until the turkey is no longer pink.
  • At last, incorporate the tomato sauce, chicken stock, water, and fresh basil into the mixture, and then allow it to reach a boil.
  • Turn the heat down to low-medium and continue cooking for twenty-five to thirty minutes. When the spinach has wilted, add it and mix it.
  • Reintroduce the soup to a boil if you are using noodles.
  • After adding the pasta, continue cooking it until it reaches the al dente stage. Check the salt level and make any required adjustments.
