Best Shrimp Taco Salad Recipe

Fresh and crispy Shrimp Taco Salad with black beans, bell peppers, and creamy avocado dressing. Plus, it's the perfect excuse to enjoy crispy fried tortilla strips.


For the tortilla strips: – 6 corn tortilla – 1/4 cup canola oil – Salt For the shrimp: – 1 lb. peeled and deveined shrimp – 1 teaspoon chili powder – 1 scant teaspoon cumin – 3/4 teaspoon garlic powder – 1 teaspoon Kosher salt – Fresh ground black pepper – 1 1/2 Tablespoons olive o


For the salad: – 6 cups finely chopped romaine lettuce – 1/2 cup black bean – 1/2 yellow bell pepper, chopped – 1/2 green bell pepper, chopped – 1/4 cup finely chopped red onion For the dressing: – 1/2 ripe avocado – 1/4 cup sour cream – 3 Tablespoon mayo – 2-3 Tablespoons water – 1 jalapeno, seeded and roughly chopped – Large handful (about 1 cup loosely packed) freshed cilantro leaves and stem – Squeeze of lime – Salt and pepper, to taste


For tortilla strips:- Make tortilla strips by heating oil in a skillet over medium heat. Put some water droplets in the oil to test its heat. If they sizzle, ready. 

Step 1

Layer tortillas and cut into strips using scissors. Frying the strips in heated oil until browned on both sides requires frequent stirring. 

Step 2

Transfer to paper towel-lined tray. You may need to do this in batches depending on your skillet size.

Step 3

The remaining salad:- Mix chilli powder, cumin, garlic powder, salt, and black pepper in a small bowl. Sprinkle the shrimp with all but 1 teaspoon of the spice mixture. 

Step 4

Heat oil in a big skillet on medium. Add shrimp and cook until pink, about 2 minutes. Turn and cook another 1-2 minutes until pink and opaque. Transfer shrimp to plates.

Step 5

Stir the remaining spices into the black beans. Sauté it in the skillet for a few minutes until hot. Remove to same plate.

Step 6

Pulse avocado, sour cream, mayo, jalapeno, and cilantro in a food processor to produce dressing.

Step 7

Add lime juice and water, a tablespoon at a time, until desired consistency. Add salt and pepper to taste.

Step 8

Mix the dressing with the greens, bell pepper, onion, and black beans. Put shrimp and fried tortilla strips on top.
