Plain toast and eggs for breakfast in the country? This "Eggs in a Basket" recipe will make that a special meal the whole family will love.

INGREDIENTS

– 4 pieces of bread (any bread, as long as it's large enough to cut a hole in the center, will work. I love sourdough or a hearty wheat) – 4 egg – 5 Tablespoons butter – Salt – Pepper – Fresh chopped herbs (optional) – Shredded cheddar cheese (optional)

INSTRUCTIONS

On both sides of each slice of bread, spread butter. Save one tablespoon of butter for later.

Step 1

Cut a circle in the middle of each piece of bread with a cookie cutter or the bottom of a juice glass.

Step 2

Put two slices of bread in a pan over medium-low heat with their cuts inside. Turn the grill over and cook until golden.

Step 3

In the middle of each hole, put a small amount of the butter you saved. Put an egg in the middle and cook for three to four minutes, or until the bottom is set.

Step 4

 Turn the eggs over and cook for another two to three minutes, until the whites are set but the yolks are still runny.

Step 5

Take the food out of the pan and place it on a plate with the shapes. Add cheese if you want it and fresh herbs like parsley or basil to taste. Salt and pepper are also good.

Step 6

Do it again with the rest of the eggs and bread. Warm up and serve.
