  • 1 large yellow onionthinly sliced
  • 3 lbs bone-in skin-on chicken thighsabout 8 thighs

  • 1 cup full-fat canned coconut milk
  • 1.5 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • Zest of 1 lemon
  • 1 sprig fresh thyme

  • The avocado oil should be heated in a big saucepan, such as a Dutch oven, until it reaches a temperature of medium-high. Another option is to use a large pan, provided that it has a lid and a lip that is deep enough.
  • Put in the chopped onions, and then season it with a tiny bit of salt from the sea. For around ten to fifteen minutes, sauté the onion while stirring it occasionally until it begins to become a darker shade of brown.
