Easter Cracker Candy is a fun and delicious stacked toffee that has your favourite Easter candy on top.

– 50 Saltine crackers. You may need more or less depending on your pan. – 1 cup light brown sugar, packed. – 1 cup unsalted butter (that's 2 sticks) – 1/2 tsp salt – 1 tsp vanilla extract – 12 ounce bag chocolate chips, I used milk chocolate. You can also use 12 ounces Hershey's milk chocolate bars, just cut the squares apart. – 1 cup Easter jelly beans and chocolate egg – spring sprinkle – marshmallow Peeps and/or chocolate bunnies, unwrapped.

Preheat oven to 400F. Cover a half-sheet pan with foil. Use nonstick spray. The spray is necessary to prevent candy from sticking to foil.

Place Saltines in a single layer on the pan. For a complete pan cover, break crackers as needed. Stir butter, sugar, and salt in a medium saucepan over medium heat to melt and dissolve.

It's okay if the butter and sugar separate now. Stir frequently as you boil. After the mixture boils, stop stirring and set a one-minute timer. Boil for one minute. Stir in vanilla after removing from heat.

Add vanilla carefully—the toffee may splutter. Immediately pour hot caramel over crackers and spread with an offset spatula. Avoid disturbing the crackers.

Place the pan in the oven for 5 minutes. Carefully remove the pan from the oven. Keep pets and children away since the toffee will be hot and the crackers may slip.

Spread chocolate chips evenly over heated caramel immediately. Lay Hershey's squares across the surface. Wait 3-5 minutes.

Step 6

Use a clean offset spatula to evenly distribute the melted chocolate over the chips. Replace the pan in the (turned off) oven for a few minutes to heat the chips if they don't melt.

Sprinkle candy and sprinkles over the hot chocolate. For good adhesion, press softly. the cracker candy will harden faster if you refrigerate the tray.

Step 8

Removing the candy from the pan should reveal a solid sheet. Peel candy foil carefully from the bottom. You may lose some candies that weren't well embedded in the chocolate.

Cut sweets with a large knife. Easter cracker candy can be kept at room temperature for a few days, but it's preferable cold. The fridge will hold it for a week. For prolonged storage, freeze.
