Gluten-free Crepes For Easter Day 2024

CREPES (MAKES APPROX 12 CREPES) 1 cup cassava flour 2 egg 1 cup full-fat coconut milk 1 cup water 2 tablespoons coconut oil, melted 2 vanilla beans, scraped or 1/2 tsp vanilla bean powder pinch kosher salt EXTRA TOPPING sliced almonds strawberrie coconut whipped cream

Get the batter ready. Put the coconut flour, eggs, coconut milk, water, coconut oil, vanilla bean, and salt in a big bowl.

Finally, mix it by hand for one minute, until it turns into a thin batter. Leave it alone for five to ten minutes to let the bubbles go down.

Make the crepes. Set your crepe pan on medium-low heat. Put the pan on its side and add ¼ cup of batter to the middle.

Flip the pan to cover the bottom quickly. Return to heat and cook for another minute or two. Cook the other side for one minute once the top is dry.

Correctly stack the crepes. Put the first crepe that's done on a plate lined with paper towels.

First, make another crepe. This time, put parchment paper between each one so they don't stick together.
