Healthy Eggs Benedict Recipe For Easter Day 2024

This is a healthy version of the famous brunch dish eggs Benedict, made with sweet potatoes. It's great!

Ingredients

– 1 sweet potato, cut into 1/4 inch to 1/2 inch thick slice 4 egg 4 slices canadian bacon parsley, for garnish HOLLANDAISE SAUCE 3 egg yolk 1 tablespoon lemon juice 1/2 teaspoon dijon 1/4 teaspoon salt pinch of cayenne pepper 1/2 cup hot butter, or ghee

Warm your oven up to 400 degrees Fahrenheit. Use a sharp knife or mandoline to cut the potato into round pieces that are all the same size.

Spread the slices out on a baking sheet. Bake for thirty to forty minutes, or until they are fully cooked. Note: It might take longer for thicker pieces.

Get the other things ready when the sweet potato is almost done. In a pan over medium-low heat, cook the bacon for about one minute on each side. Put away.

Bring water to a slow boil in a pot. With a spoon, make a whirlpool, then crack the eggs and poach them for 3 to 4 minutes. Take the eggs out of the pot and put them in a bowl.

Together with the lemon juice, Dijon mustard, salt, and cayenne pepper, add the egg whites to a powerful blender. Blend for about 5 seconds.

Then, with the mixer on medium-high, slowly add the hot butter until the sauce is fully mixed. Put it in a small bowl.

After cooking, plate the potatoes. Top with Canadian bacon, fried egg, and hollandaise sauce. Garnish with chopped parsley and serve immediately!
