Herby Chicken Thighs With Smashed Chive And Onion Potatoes Recipe

INGREDIENTS
for the spice blend:
– 3 teaspoons onion powder
– 3 teaspoons garlic powder
– 2 teaspoons dried parsley
– 2 teaspoons dried oregano
– ½ teaspoon freshly ground pepper
for the chicken thighs:
– 3 lbs. bone-in skin-on chicken thigh
– 2 teaspoons kosher salt
– 2 tablespoons avocado oil
for the potatoes:
– 1.5 lbs. Dutch baby potatoes sub fingerling potatoes
– ½ cup white vinegar
– 3 tablespoons avocado oil
– 1 teaspoon kosher salt
INGREDIENTS
for the sauce:
– 2/3 cup avocado oil mayo (or homemade mayo)
– ¼ cup fresh lemon juice
– ¼ cup chopped fresh parsley
– 2 green onions chopped
– 2 garlic cloves chopped
– 1 teaspoon onion powder
– ¼ teaspoon kosher salt
– ¼ cup chopped fresh chives plus more for serving
INSTRUCTIONS
create spice blend:- Mix onion, garlic, dried parsley, dry oregano, and pepper in a small bowl. Save. Dry chicken thighs with paper towels. Salted everywhere. Place on a platter and chill uncovered 30–60 minutes.
Step 1
prepare chicken:-In a wide-mouth mason jar, combine mayo, lemon juice, parsley, green onions, garlic, onion powder, and kosher salt. Puree with immersion blender. Add minced chives. Keep cold until serving.
Step 2
Boil potatoes :- LARGE potato pan. Cover potatoes with white vinegar, salt, and 1 inch of water. Boil, cover, and fork-tenderize potatoes 8-10 minutes. Drain and refill pot.
Step 3
chicken-make:- Set oven to 425℉. Parchment, 2 baking sheets. Get the chicken out of the fridge and dry with paper towels. On baking sheet, avocado oil thighs on both sides.
Step 4
Spread half the spice blend over each thigh. Right side up. Bake thighs on top rack for 35-40 minutes until 165℉ and skin crisps.
Step 5
Potatoes mashed and crispy:- Place cooked potatoes on another sheet. Smooth potatoes with a glass bottom. Sprinkle half the spice blend and salt on avocado oil. Toss softly.
Step 6
After 15 minutes of chicken frying, roast potatoes on the bottom rack for 25 minutes, flipping halfway, until crisp. After baking, add chives.
Step 7
Serve and enjoy! :- Green sauce and chicken thighs in mashed potatoes.
