This recipe for Molten Chocolate Lava Cake is great for making a small amount of cake. It takes less than 30 minutes to make and is easy to do.

SERVINGS: 2 LAVA CAKES – ¼ cup unsalted butter (60 grams) – 2 ounces semi-sweet chocolate chopped (57 grams) – ½ cup powdered sugar (60 grams) – 1 large egg at room temperature – 1 large egg yolk at room temperature – ½ teaspoon vanilla extract – ¼ cup all-purpose flour spooned & leveled (32 grams) – ½ teaspoon instant espresso powder optional

Step 1

Heat the oven to 425°F (218°C). Spray two 6-ounce ramekins with nonstick cooking spray and set on a baking sheet. Set aside.

Step 2

Microwave the butter and semi-sweet chocolate in big microwave-safe bowls for 20–30 seconds, stirring well after each increment, until melted and smooth.

Step 3

Remove from microwave and whisk in powdered sugar until thoroughly blended. Add egg, egg yolk, and vanilla and stir until incorporated.

Step 4

Take care not to overmix the batter when you add the flour and espresso powder. Split the batter between the two ramekins.

Bake 12–14 minutes until edges are crisp and centre is slightly soft. Remove from oven and let stand 1 minute. Carefully slide each ramekin onto a tiny platter, serve, and enjoy!
