This recipe for Molten Chocolate Lava Cake is great for making a small amount of cake. It takes less than 30 minutes to make and is easy to do.
SERVINGS: 2 LAVA CAKES– ¼ cup unsalted butter (60 grams)– 2 ounces semi-sweet chocolate chopped (57 grams)– ½ cup powdered sugar (60 grams)– 1 large egg at room temperature– 1 large egg yolk at room temperature– ½ teaspoon vanilla extract– ¼ cup all-purpose flour spooned & leveled (32 grams)– ½ teaspoon instant espresso powder optional

Heat the oven to 425°F (218°C). Spray two 6-ounce ramekins with nonstick cooking spray and set on a baking sheet. Set aside.
Step 2
Microwave the butter and semi-sweet chocolate in big microwave-safe bowls for 20–30 seconds, stirring well after each increment, until melted and smooth.
Step 3
Remove from microwave and whisk in powdered sugar until thoroughly blended. Add egg, egg yolk, and vanilla and stir until incorporated.
Step 4
Take care not to overmix the batter when you add the flour and espresso powder. Split the batter between the two ramekins.
Step 5
Bake 12–14 minutes until edges are crisp and centre is slightly soft. Remove from oven and let stand 1 minute. Carefully slide each ramekin onto a tiny platter, serve, and enjoy!
