Oatmeal Raisin Cookie Recipes 

It’s crazy to think that I first shared this oatmeal raisin cookie recipe back in 2012. I made them for a New Year’s Eve party and they were a big hit, so of course I had to share them here! 

– 2 cups old fashioned rolled oats – 1 ½ cup oat flour –  teaspoon baking soda – ½ teaspoon baking powder – 1 teaspoon cinnamon – ½ teaspoon ground nutmeg, optional – ¼ teaspoon sea salt – ¼ cup melted coconut oil – 2 Tablespoons applesauce – 1 cup coconut sugar – 2 eggs, or ⅓ cup egg white – 1 teaspoon vanilla extract – ½ cup raisin

Ingredient

Preheat oven to 350°F and line two baking sheets with parchment or silpat mats.

Direction

Mix oats, flour, baking soda, baking powder, cinnamon, salt, and nutmeg in a medium basin. Set aside.

Beat oil, applesauce, sugar, eggs, and vanilla in a large bowl on medium speed until frothy and creamy.

Slowly beat in the dry ingredients to the wet ingredients until combined.

Gently mix in the raisins.

Drop 1 Tablespoon of dough on prepared baking sheets 2 inches apart using a medium cookie scoop. Press each biscuit lightly with a fork.
