The Best Pimento Cheese Burgers Recipe

The creamy, melty, slightly sweet heat of pimento cheese is mixed with a juicy burger in these Pimento Cheeseburgers.

INGREDIENTS

For the pimento cheese: – 2 cups shredded sharp cheddar cheese – 6 ounces cream cheese – 3 Tablespoons mayonnaise – 4 ounce jar pimento peppers, drained and chopped – 1/2 teaspoon Old Bay seasoning – 1/2 teaspoon Tabasco sauce – Salt, to taste For the burgers: – 1 1/2 lbs ground beef – 1 1/2 teaspoons Old Bay Seasoning – Fresh black pepper – 1 teaspoon salt – Pat of butter (optional) To serve: – Sliced tomato – Leaf lettuce – Sliced red onion

INSTRUCTIONS

Put the mayonnaise, pimentos, Old Bay Seasoning, Tabasco, and cheddar cheese in a stand mixer or a bowl and mix them together

Step 1

Mix on medium speed until the mixture is thick and smooth. Add salt to your liking.

Step 2

Mix the ground meat, Old Bay, salt, and pepper together slowly in a different bowl. With your hands, form the burger meat into four patties of the same size.

Step 3

 To make a hole in the middle of each cake, press your finger into it. That way, your burgers won't fall apart in the middle when they're done.

Step 4

Warm up a grill or a cast iron pan over medium-high heat. Place a piece of butter in a cast iron pan and let it melt. 

Step 5

Grill or fry the burgers for four to five minutes on each side, flipping them only once, or until they hit 160 degrees on the inside for medium-rare. 

Step 6

For the last two minutes of cooking, cover the burgers and add big scoops of pimento cheese on top. This will let the cheese melt.

Step 7

While that's going on, butter the buns and cook them for a minute or two next to the burgers. 

Step 8

If you want, you can top the burgers with more pimento cheese, red onion, tomato, and lettuce pieces.
