Turkey Enchilada Roll Ups Recipe

Thanksgiving highlights God's overwhelming love. Thanksgiving tables are perfect examples of His abundance and provision. Meats, veggies, sweets, and potatoes fill us up.  

INGREDIENTS

2 cups cooked, shredded turkey breast 1 8 oz pkg. cream cheese, softened 2/3 cup shredded cheese (I used Cheddar but I think Pepper Jack would be great!) 1 clove minced garlic 2 tsp. chili powder 1/2 tsp. cumin 1/4 tsp. cayenne pepper 1/4 cup cilantro, chopped 3 green onions, chopped 1 can tomatoes with green chilies, drained well Few drops hot sauce (if desired) Salt 6 8 in tortillas

INSTRUCTIONS

Put the turkey, cream cheese, and shredded cheese into a large bowl and mix them together.

Step 1

Garlic, chili powder, cumin, cayenne, cilantro, onions, and tomatoes should be added to the mixture.  

Step 2

After thoroughly combining, mix. Examine the combination. Season with salt and/or spicy sauce, if you so want.

Step 3

Place the tortillas in a single layer on a cutting board. Each tortilla should have a substantial amount of the turkey mixture spread out on it until it is within half an inch of the edges.

Step 4

The tortillas should be rolled up, with the seam side facing down, and then sliced with a sharp knife into rounds that are one inch thick.  

Step 5

When ready to serve, place in the refrigerator. Serve chilled or at room temperature before serving.
