  • 1 large lemon -zest and juice (about 1 tsp. of zest and 1 tbsp of juice)
  • 1/4 cup granulated sugar
  • 2 teaspoons corn starch
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

  • Grate 1/4 to 1/2 tsp of lemon zest from your lemon before extracting the juice if you want sharp, citrusy overtones in your blueberry sauce.

  • In a medium saucepan, combine blueberries, honey, vanilla, 1 tablespoon lemon juice, and salt.

  • To release their juices, split the blueberries into smaller pieces using a potato masher. Since I prefer chunky sauce and the blueberries tend to mash themselves when cooking, I barely mash them halfway through my saucepan. This lets out just enough liquid to begin cooking while preserving the majority of the blueberries. After cooking, you may certainly mash the blueberries further if you’d like a smoother consistency.

  • After bringing the mixture to a boil, lower the heat to medium and simmer it.
    Stirring often, simmer for five minutes.
