Pulled pork

  • 4- pound pork butt bone-in
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon salt
  • Fresh cracked pepper to taste
  • 2 tablespoons brown sugar
  • 1 18 oz bottle BBQ sauce I used a low sugar kind

Sweet potato rounds

  • 2 sweet potatoes
  • 1 tbsp. olive oil
  • ½ tsp garlic
  • ½ tsp. onion powder
  • ½ tsp. smoked paprika
  • Salt and pepper to taste

  • 2 ear of corn grilled and cut of the cob
  • 1 15 oz can of black beans rinsed and drained
  • 1/3 cup pickled red onion
  • 1 large avocado, sliced
  • 2 tablespoons finely chopped cilantro, optional

  • To prepare the pork, take it out of its package and use paper towels to give it a thorough cleaning on all sides. If preferred, remove some of the larger fat chunks off the outside, being careful to preserve some fat. Combine the smoked paprika, garlic and onion powder, brown sugar, salt, and pepper in a bowl. Make sure the entire pig butt is covered in seasoning by liberally seasoning it with the spice mixture. Put in the refrigerator for at least four hours, but better overnight, to allow the spice to seep in.

  • To the slow cooker, add the seasoned pork butt and pour in the full bottle of BBQ sauce. Simmer for ten hours on low. After the meat is done, remove it from the crockpot and reserve the liquid. Shred the pork with two forks, being careful to remove the fattier portions. Place the pulled pork shreds in a bowl. Pour part of the cooking liquid that was set aside on top.

  • Set the oven’s temperature to 425. Sweet potatoes should be cut into rounds. Pour some olive oil over it. Add smoked paprika, onion powder, garlic powder, and salt to the sweet potatoes for seasoning. Roast for 20 to 25 minutes, turning once during the cooking process, or until the outside is golden brown and the center is soft.

  • To a bowl, add the shredded pulled pork, black beans, charred corn, roasted sweet potatoes, sliced avocado, and pickled red onion.
